Yellow Onion, 1 Large Onion
Chicken Broth, 4 Cups
Fire-Roasted Diced Tomatoes, 1 Can
Kale, 1 Bunch
Optional: Italian Parsley
Optional: Lemon
Optional: Parmesan Cheese
Directions

Ingredients

  • 2 tablespoons canola oil
  • 10 ounces Purity Hot Potuguese Sausage, sliced into rounds
  • 1 large yellow onion, medium dice
  • 4 cups chicken broth
  • 1 can fire-roasted diced tomatoes
  • 1 bunch kale, stems removed, leaves chopped
  • Optional: Italian parsley
  • Optional: Lemon
  • Optional: Parmesan cheese

 

Directions

  1. In a large pot over medium heat, add the oil and sliced sausage and cook until it starts to brown, about 5-7 minutes.
  2. Add the diced onion to the pot with the sausage and cook until translucent and slightly golden, about 2 minutes.
  3. Add the chicken broth, fire-roasted tomatoes, and chopped kale to the pot and bring the mixture to a boil, then reduce to a simmer. Let it cook until the kale is wilted and tender, about 10-15 minutes.
  4. Taste the soup and adjust the seasoning with salt & pepper, if necessary. Serve hot, over rice, or with crusty bread, if desired.
